So suppose you want to install some server. Like OCS: http://wiki.ocsinventory-ng.org/index.php/Documentation:Teledeploy or FOG: http://community.spiceworks.com/how_to/373-fog-server-install-free-opensource-ghost for example. But you just dont like the heavier GNOME3 and/or the pure GUI-less server. Or you want to play around with CentOS7 or Ubuntu Server in a VirtualBox. But want some thing lighter then GNOME3. And/or you just want install a modern version of a Desktop/Workstation OS on an somewhat aging hardware. Then MATE seems like "Backt to the future approach". Where you get familiar pre-post-2010's interface. That is kind of slightly more functional then the more lower-end-ish XFCE or so.
Then you can do the following:
For CentOS7: http://www.server-world.info/en/note?os=CentOS_7&p=x&f=7
For Ubuntu Server: http://www.server-world.info/en/note?os=Ubuntu_14.04&p=x&f=4

And as of why i would use Ubuntu GNOME on some hewer hardware is because of Debians Multiarch: https://wiki.debian.org/Multiarch
