I always count Friday as part of my weekend. My Friday morning started at McDonalds where teachers were getting a free breakfast meal all week long. I had not had time to go get my free breakfast any other day, but on Friday we start a little later and have morning meetings, so I decided it would be the perfect time to get this freebie. I was the only car at the drive through, so while I was getting my breakfast, I got breakfast for Charly as well, and had time to drive back home and drop it off before going to school. Once I got to school, I didn't actually have time to eat the breakfast, so I decided to save it for lunch, which worked out just fine.
Friday was a very busy day at school, with lots of grading to do because it was the final day that students could submit assignments for the first grading period. I gave students time to work and have questions answered and I got as much grading finished as I could. I did take a few breaks to look out of my classroom window at this the mountain view I have. The sky was cloudless and it was a perfect fall day, even it was a little chilly.
Charly and I went for a walk as soon as I got home on Friday. This tree in my neighborhood has been gorgeous this fall, but the leaves are falling off of it and soon it will be ready for winter.
I love walking with my sweat heart on such a perfect fall day.
Friday night, Charly and I headed downtown for a "date night" at the Capitol Theater with the Utah Opera Company. We saw The Barber of Seville, and it was a great production and most enjoyable! This is the first performance we have been to since January 2020. Proof of vaccination was required to get into the show and most people in attendance masked up. It was a nice evening, and we are looking forward to going to a ballet performance at the same venue later this month.
Saturday was another perfect fall day. Charly and I took a morning walk. This tree on my street looked like it was literally glowing with fall splendor. The picture doesn't do it justice.
After the walk, I needed to go to my favorite store (NOT) to get some cleaning supplies I was running low on. With all the talk of supply chain issues, I thought it best not to run out of basic things like soap and laundry detergent. Thankfully, all the shelves were fully stocked and I was able to get a container or two extra of everything I bought.
In the afternoon, Charly did some painting that needed to be done, on the ceiling where we had our lights replaced.
While Charly painted, I folded and put away a couple of loads of laundry I had washed earlier in the day. I listened to this audiobook while I worked. This is a very interesting nonfiction book about the American Revolution and some of the lesser known challenges and dangers that George Washington faced as the leader of Continental Army. It is really quite fascinating. I hope to finish it next week.
I have also been reading this Christian nonfiction book, which I finished on Saturday. I will be reviewing this book in my end of the month reading round-up.
I spent some time Saturday afternoon out in my patio garden, moving plants around, pulling up dead plants and generally trying to get things tidied up and ready for winter. I moved my Fig Tree, hydrangea bush and dwarf lilac bush into a covered portion of the patio next to the fence. I am hoping they will be able to survive the coming winter there. I plan to cover them up when we have freezing temperatures, which won't be far off.
I brought these green tomatoes in that were still on the vines that I pulled up. I am really hoping that they will ripen in the house, because it is getting too cold for them outside.
I got on Amazon and ordered some more tulip bulbs for my front flower garden. Seeing the tulips come up in the spring makes me happy and I am excited to get these bulbs and add to what I already have there.
Saturday night's dinner was home cooked cheese burgers and tater rounds. Home cooked burgers are SO MUCH better than fast food burgers, in my opinion.
After dinner Saturday night, Charly and I sat on the couch together and watched a video lecture for the new online class I am taking through Hillsdale College about the great books of the Western World. The lecture, about the Iliad, was pretty interesting.
Sunday morning, as usual, we all went to church, Josh helped set up more chairs in the back overflow. Masks are now optional in our services, if congregants social distance. Unfortunately many don't distance and many are still unvaccinated and against getting the vaccinations. As a mom, I am always happy and proud when Josh helps out at church. He also helped with the Sacrament (Communion) again today.
Charly and I came home after church. Josh stayed for Sunday School. When I got home, I did some indexing of military records from 1917 and baptism records from Barbados in 1885. I achieved and surpassed my indexing goal for October.
Sunday dinner was Cheesy Brunch Potatoes, along with fresh steamed green beans, sauteed asparagus and garlic toast. The Cheesy Brunch Potato recipe is one I found in a cookbook, combined with a similar recipe I found online, and then modified a bit. Here is this delicious recipe as I fixed it:
32 oz. bag of frozen diced potatoes
1 large chopped onion
1/2 pound of Jimmy Dean's Sage Sausage
8-10 sliced of cooked bacon
2 cans (10.5 oz) of cream of potato soup (I did not have cream of potato soup so I used one can of cream of mushroom soup and one can of cream of celery soup).
8 oz. of sour cream
2 cups of grated cheddar cheese
Combine all ingredients in slow cooker sprayed with Pam or a similar cooking spray. Cook on high for 3 hours, or low for 6 hours.
After dinner, Charly and I went for a walk. It was a nice cool evening cool - but not cold and just slightly breezy. We watched another lecture of the online class I am taking on great books of the Western World. This lecture was about The Odyssey - a piece of literature I have taught many times over the years. It was an interesting lecture. I am loving these online classes offered by Hillsdale College and I am glad I can use them for credit toward a salary increase.
I plan to spend the rest of the evening reading and answering an email to a friend. It's been an overall good weekend. Here's what's up in the coming week.
